What kid doesn't love a chocolate chip muffin?? This is a quick and versatile muffin recipe that has saved many a banana or apple from the bin!! Combine the simple ingredients of flour, egg, milk, oil with banana, apple and chocolate and bake for 15minutes for light and fluffy muffins. They can be easily stored in the freezer (if they don't all get eaten on the first day!!)
As with all my recipes, you can sub in dairy and non dairy alternatives, we always use dairy free and the results are great but if you prefer using dairy it will be equally as good and delicious!!
Ingredients:
2 cups Self Raising Flour
1/2 cup Raw Sugar
1/4 tsp Salt
1/2 cup Chocolate Chips (I used dairy free chocolate cut into chunks)
1/2 cup Milk
1 tsp Vanilla
1 Large Egg
1 Apple - grated
1 cup Mashed Banana
1/4 cup Oil or melted Nuttelex
Method:
1. Preheat your oven to 190C.
2. Combine your dry ingredients and chocolate in one large bowl.
3. Mix all the wet ingredients, including the egg, in another bowl.
4. Make a well in the dry ingredients and pour in your wet ingredients.
5. Fold gently until thoroughly mixed.
6. Distribute the batter between a greased muffin or mini muffin pan. This recipe will make at least 24 mini muffins.
7. Bake for 10-15minutes for mini muffins or 20minutes for large muffins, or until a skewer comes out clean. I recommend keeping an eye on them so they dont overcook.
8. Allow to cool fully before storing in a container or freezing.
My kids absolutely love these muffins as they are but here are some alternatives or add ins that you might like to try:
Add a few frozen blueberries to each muffin before baking.
Replace the chocolate with grated carrot and a dash of cinnamon for a baby/toddler friendly option (if you're not keen on them having chocolate of course!!)
Replace the apple with raspberries and the chocolate with white choc chunks (if anyone knows where I can get dairy free white chocolate I would love to know!!)
Use a mini loaf pan instead of muffins.
Replace the banana with an extra egg if you don't have banana.
